From the official DM8127 product page I can see we have several more models available, not just two.

Usually these things are documented in the device datasheet and/or silicon errata. So you should check the DM8127 datasheet and silicon errata.

For example, this is what we have in the DM814x datasheet and silicon errata:

CYE1 is for frequencies ARM at 1000MHz, DSP at 700/750MHz, HDVICP2 at 410MHz, HDVPSS at 220MHz, SGX at 280MHz, ISS at 480MHz, M3 at 240MHz, L3/L4 at 220MHz, DDR at 533MHz

CYE2 is for frequencies ARM at 1000MHz, DSP at 750MHz, HDVICP2 at 450MHz, HDVPSS at 220MHz, SGX at 280MHz, ISS at 560MHz, M3 at 280MHz, L3/L4 at 220MHz, DDR at 533MHz

9.1.2 Device and Development-Support Tool Nomenclature

DEVICE SPEED RANGE
Blank = 600-MHz ARM, 500-MHz DSP
0 = 720-MHz ARM, 600-MHz DSP
1 = 1000-MHz ARM, 700-MHZ DSP
1 = 1000-MHz ARM, 750-MHZ DSP [SR3.0 only]
2 = 1000-MHz ARM, 750-MHz DSP
